- Melt the chocolate and butter over a double boiler.
- In a separate bowl, whisk together the eggs, sugar, vanilla sugar and a pinch of salt until the mixture is foamy.
- Add the melted chocolate to the egg mixture and mix until combined.
- Add the flour and baking powder and mix until smooth.
- Cover the mixture and leave to rest in the refrigerator for at least 3 hours, ideally overnight.
- Shape the cooled mixture into balls and roll them generously in powdered sugar.
- Bake in a preheated oven at 180 °C for exactly 10 minutes so that they are crispy on the outside and soft on the inside.
