Chocolate Linzers with Pomegranate Jam

Fragrant, crumbly, and rich chocolate Linzers filled with pomegranate jam—perfect holiday cookies that are simple to make and even easier to disappear from the table. Adding ground almonds gives them a delicate aroma, while a final dusting of cinnamon and powdered sugar completes the festive touch.

Ingredients

  • 400 g all-purpose flour
  • 1 tsp baking powder
  • 3–4 tbsp cocoa powder
  • 150 g powdered sugar
  • 100 g ground almonds
  • A pinch of salt
  • 1 packet vanilla sugar
  • 250 g Zdenka cream cheese butter
  • 1 egg
  • Pomegranate jam
  • Powdered sugar + cinnamon for decoration

Instructions

  • Combine all the dough ingredients.
  • Shape the dough into a ball, wrap it in plastic wrap, and chill it in the refrigerator for one hour or overnight.
  • Roll out the chilled dough to about 2–3 mm thickness and cut out the Linzer shapes.
  • Make a small hole in the center of half of the cookies.
  • Arrange the cookies on a parchment-lined baking sheet. Bake in a preheated oven at 180 °C for 6–7 minutes, until the edges are just firm.
  • Heat the pomegranate jam, and when slightly cooled, use it to sandwich the cookies together.
  • Dust the finished cookies with a mixture of powdered sugar and cinnamon.
