Mujadara and Chocolate Cheese Mousse

Ingredients

MUJADARA:

  • 1 tbsp olive oil
  • 4 onions
  • 1 cup lentils
  • 1 cup basmati rice
  • 1/2 liter water
  • Salt and pepper, to taste
  • Cumin
  • Parsley
  • Bay leaf
  • Oat yogurt (for serving, optional)

 

CHOCOLATE CHEESE MOUSSE:

  • 500 g Zdenka cottage cheese
  • 20 g cocoa powder
  • 50 g almonds
  • 10 g chia seeds
  • 1 tsp sweetener of choice
  • 10 g raisins soaked in liqueur

MUJADARA:

  • Heat the olive oil, then gently caramelize the chopped onions until soft and golden brown. Add a pinch of salt and pour in half a liter of water. Close the pot (or Cook4me device) and cook under pressure for 5 minutes.
  • Add the lentils (pre-boiled for 5 minutes), basmati rice, cumin, bay leaf, finely chopped parsley, and season with salt and pepper to taste. Cook everything together until the lentils and rice are fully tender - in the Cook4me for another 5 minutes under pressure, or if using a regular pan or pot, cover and simmer over low heat for 10 to 12 minutes, stirring occasionally and adding a bit of water if needed.

 

CHOCOLATE CHEESE MOUSSE:

  • In a food processor or blender, combine the cheese, cocoa powder, almonds, and chia seeds. Blend until you get a uniform mixture. Then add agave syrup, honey, or another sweetener of your choice, adjusting the sweetness to your taste.
  • Add the raisins that were previously soaked in liqueur, and blend everything until smooth and creamy.
  • Optionally, reserve some of the raisins for decoration before serving.
