Zdenka Snow Balls

Soft, delicate, and romantic, these “snow balls” are an ideal holiday dessert. Coated in fine, ground sponge cake and filled with an airy cream made from Zdenka fresh cheese and Original cream cheese spread, they melt in your mouth.

Ingredients

For the sponge cake

  • 1 egg
  • A pinch of salt
  • 1 packet vanilla sugar
  • 180 g sugar
  • 5 tbsp cold water
  • 200 g flour
  • ½ packet baking powder

For the cream

  • 250 g Zdenka Fresh Cheese (for cooking and baking)
  • 1 pack Zdenka Original Cream Cheese Spread
  • 150 g sour cream
  • 2–3 tbsp rum
  • 300 g heavy cream
  • 50 g powdered sugar
  • 1 packet vanilla sugar

Instructions

1. Bake the sponge

  • Beat the egg, sugar, vanilla sugar, and a pinch of salt in a large bowl.
  • Add the cold water and briefly mix again.
  • Gently fold in the flour mixed with baking powder.
  • Pour the mixture into a baking tray lined with baking paper.
  • Bake at 180 °C for about 10 minutes, until the sponge turns a light golden color.
  • Let the sponge cool completely, then crumble it by hand.

2. Prepare the cream

  • Mix all the cream ingredients until you get a light, slightly loose texture, being careful not to overmix.

3. Shape the balls

  • Combine the crumbled sponge with the cream—preferably using your hands or a large spoon.
  • Mix until you get a compact but soft mixture suitable for shaping.
  • Form balls about the size of a tennis ball.
  • Roll them in shredded coconut.
  • Refrigerate for 2–3 hours before serving so they can firm up completely.
